Welcome!

I decided to create this blog, to replace my old one I had and was losing interest in and thinking and having things to post. Looking at my stats, I saw there was a lot of interest in my recipes I had posted. I do love to cook and have lots of recipes to talk about and post, and so decided to create this blog specifically for those of us that love to create in the kitchen! Desserts

Mandarin Orange Cake


2 cups sugar
2 cups flour
2 tsp. baking soda
1/2 tsp salt
Sift and add beaten eggs, then add drained oranges, then beat 4 minutes low speed.
2 eggs, beaten
2-11 1/2 oz well drained mandarin oranges 
pour in 9x13 greased pan
Bake in 350 degree oven 30-35 minutes
Topping
3/4 cup brown sugar
3 tablespoon milk
2 tablespoon butter
Bring to a boil, pour over cake straight from oven.


Hummingbird Cake


3 cups flour                                   1 1/2 T vanilla
2 cups sugar                                  1 can (20 oz) crushed pineapple, undrained
1 T. salt                                         1 cup pecans, or walnuts, chopped
1T baking soda                              2 cups bananas, chopped
1 T cinnamon
3 eggs, beaten
1 1/2 cups oil


Combine in large mixing bowl flour, sugar, salt, soda and cinnamon.  Add eggs and oil; stir until dry ingredients are well mixed.  (Do not beat).  Stir in remaining ingredients; mix well.  Spoon batter into 9 x13 inch pan.  Bake at 350 degrees for 30 to 35 minutes. Cool; frost.


Frosting:
1 pkg. (8oz) cream cheese, softened 
1/2 cup butter or margarine
1 pkg. (16 oz) powdered sugar
1 tsp. vanilla
1 cup nuts, chopped
Combine cream cheese with butter or margarine; cream.  Add powdered sugar and vanilla.; beat until light and fluffy.  Frost cake; top with nuts.


Easy Mix Chocolate Cake
1 1/2 c. flour
1 cup sugar
3 tablespoons cocoa
1tsp. soda
1 pinch salt
1 tablespoons vinegar
1 tablespoons vanilla
1 cup water
1 cup chopped nuts
6 tablespoons oil
Mix with fork.  Make 3 holes. 1 large and 2 small.  Add 6 tablespoons cooking oil in large hole.  Put 1 tablespoon vinegar in 1 small hole.  Put 1 tsp. vanilla in another hole.  Mix 1 cup water over all...stir with fork until blended.  Add 1 cup chopped nuts and bake 350 for 25 minutes.  Instead of water you can use 1/2 coffee and 1/2 water or all coffee.  Put in 8 x8 ungreased pan.

Grandma's Pumpkin Pie
1/12 C. Pumpkin
3/4 c. sugar
1/2 tsp. salt
1-1 1/2 tsp. cinnamon
1/2-1 tsp. ginger
1/4-1/2 tsp. cloves
1/4-1/2 tsp. nutmeg
3 slightly beaten eggs
1 1/4 c. milk
1 6 oz, can evaporated milk
Mix all ingredients well and pour into a 9" pastry shell.  Bake at 400* 50 minutes or until knife comes out clean.
This was my Great grandma Brookshier's recipe and is the spiciest, best tasting recipe I've ever had.
Orange Zucchini Bread
1 c. butter
1 T. orange rind, grated
1 t.cinnamon
1/2 t. nutmeg
1 t. baking soda
4 eggs
1/2 t. salt
1 c. zucchini, shredded
1/4 t. ground cloves
1/4 t. baking powder
2 c. light brown sugar, packed
3 c. all-purpose flour, sifted
1/3 c. orange juice
Cream butter, orange rind, cinnamon, nutmeg, cloves and brown sugar.  Beat eggs, one at a time.  Sift together flour, baking powder and salt.  Blend in creamed mixture alternately with orange juice.  Stir in zucchini.  turn into 10 inch tube pan.  Bake at 350 degrees for 55 to 60 minutes.  Cool before serving.
