Welcome!

I decided to create this blog, to replace my old one I had and was losing interest in and thinking and having things to post. Looking at my stats, I saw there was a lot of interest in my recipes I had posted. I do love to cook and have lots of recipes to talk about and post, and so decided to create this blog specifically for those of us that love to create in the kitchen! Side Dishes

Southern Baked Beans


1 large onion, diced
2 (16-ounce) cans pork and beans
3 tablespoons prepared yellow mustard
1/4 cup maple syrup
1/4 cup light brown sugar
4 tablespoons ketchup
1 tablespoons lemon juice
12 pound bacon strips, cut into 1/2-inch pieces


Directions
Preheat oven to 350 degrees F.


In a dutch oven, mix onion, pork and beans, mustard, maple syrup, light brown sugar, ketchup, and lemon juice. Top with the bacon pieces.  Bake, covered, for 45 to 60 minutes.
Tangy Green Beans
2 Tablespoons prepared mustard
2 Tablespoons sugar
1/3 c. butter
Salt and Pepper to taste
2 Tablespoons lemon juice
2 Tablespoons apple cider vinegar
3 c. cooked, hot green beans
Heat mustard, sugar, butter, salt and pepper.  When butter is melted and blended, add the lemon juice and vinegar.  Pour over hot, drained green beans.  Serves 6-8.

Burger Joint Onion Rings

1 large onion
1/2 cup all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1 egg
1/2 cup 2% milk
1/4 cup plus 2 TBSP. dry bread crumbs
Oil for deep-fat frying
1/2 tsp. seasoned salt

Cut onion into 14-in. slices; separate into rings.  In a shallow bowl, combine the flour, baking powder and salt.  In another shallow bowl, whisk egg and milk.  Place bread crumbs in a third shallow bowl.  Coat onion with flour mixture, then dip in egg mixture and coat with bread crumbs.
In an electric skillet or deep fryer, heat oil to 375 degrees.  Fry onion rings, a few at a time, for 30 seconds on each side or until golden brown.  Drain on paper towels.  Sprinkle with seasoned salt. Yield: 4 servings.
